A lovely, warm and crispy sweet potato hash brown recipe, sure to make your mouth water. I seriously can’t stop making these, I’m addicted!! With just a few simple ingredients, you too could have these sweet potato hash browns in mere minutes! They’re great to have as a snack, as a side dish, or just to use to dip into sauces! I love how these hash browns are super crispy, but without being oily and greasy whatsoever. I can’t wait for you to give these a go!
Sweet potato is one of my favourite veggies- if you couldn’t tell- and I love to add it into a huge range of meals. I use it as a sugar substitute, as a binder in my bakes, in starchy and carb heavy meals. Sweet potatoes are highly nutritious, help with gut health, support healthy vision and contribute towards our immune systems. I also love the brightness that they bring to a meal, and I love the idea of “eating the rainbow”. Eating in this colourful way allows us to get in a huge variety of nutrients and minerals, which helps us boost our overall health. I recommend you try this mindset too!

I recommend also swapping out the sweet potato for regular white potato, or for carrots! The quantity stays the same with white potatoes, but if you would like to use carrots instead, I would suggest using around 5/6 carrots. Typically, you want about 3-4 cups worth of grated carrot/potato, so as long as you keep the ratios aligned with the ingredients list below, you can have fun trying out various vegetables. I would really like to try using parsnips in this recipe, perhaps subbing out 1 sweet potato for a couple of parsnips, to add in a more starchy, deep flavour to the hash browns!

Ingredients: (makes 6 large hash browns)
- 2 medium sweet potatoes
- 1/2 cup gluten free flour
- 2 eggs
- 1 tbsp salt
- parsley to serve
Method:
Step 1: peel and grate your sweet potatoes.
Step 2: add all you ingredients to a bowl. Mix thoroughly until everything has been well incorporated.
Step 3: using an ice-cream scoop, form balls and then press into an oval shape.
Step 4: air fry for 10 mins on 190°, flipping after 7 minutes.
Best served hot, with some freshly chopped parsley. There is to option to freeze these after air frying and then re-air fry at a later time, until piping hot throughout. They will store in an airtight container in the fridge for up to 4 days.
