Easy 2 Ingredient Peanut Rice Cake Cluster Bars

Want a quick and healthy snack? Try out these rice cake snaps for a crunchy, healthy snack. With only 2 ingredients, minimal effort, little clean-up and zero skill required, these peanut rice cake cluster bars are certainly a new favourite of mine! These treats are so addictive and incredibly more-ish. It is great that they don’t have any sweetness, a great savoury snack for you to grab on the go! I especially love that I can practically make these all of the time, since I usually have both ingredients in my home!

I recommend smooth peanut butter for this recipe, it helps to keep the crunch focussed on the rice cakes. This makes the crunch more brittle than chewy- like how crunchy peanut butter would. But, crunchy peanut butter also works wonderfully in this recipe, if you want that extra crunch! You could also opt for a salted or sweetened peanut butter, to add in some extra flavour into your peanut rice cake cluster bars, without adding any other ingredients. For example, you could try a maple syrup flavoured peanut butter or a gingerbread spiced one- those would taste fabulous!

What else you could add to your peanut rice cake cluster bars:

  • Peanuts- roasted or raw
  • Strawberries- adding a bit of freshness
  • Chocolate chips
  • Maple syrup
  • Coconut oil (to help the bars stay more solid in warmer than freezer temperatures)
  • Chopped walnuts or pecans
  • A layer of chocolate on the top
  • Dairy free caramel or toffee layer

Ensure to be gentle when mixing the peanut butter with the rice cake pieces. If you are too vigorous, you run the risk of breaking up the pieces too much. The bars taste better with larger rice cake chunks (about 1-2cm thick) because it helps with alternating the texture. Some bites you will get more rice cake, and some you will get more peanut butter. I love this varied texture because it keeps it interesting. In addition, when you chop the bars, the layering of the peanut butter and rice cakes looks really nice- as seen in the final image below!

In this image, you can see that I used a baking tray to place my peanut rice cake cluster bars in the freezer. Ensure that your baking trays are freezer useable! If they are not, you can easily place your bars into ice cube blocks, or a takeaway box, this will work just as well! When you place your bars into the freezer, I recommend you make them about 1-2 inches thick. This will give you really well proportioned bars that are really great to eat. I can usually make 8 bars out of this thickness, but feel free to make your peanut rice cake cluster bars thinner, wider or bite size etc. It is completely up to you!

You may also find it a good idea to put melted coconut oil into your peanut butter mix as you put it in the microwave. This will help you to keep your bars more solid and easy to handle. I find that when I take the bars out of the freezer, they start to melt in my hands immediately. I don’t mind this, because I feel like it adds to the fun of eating them! If this is something that you do not want, add about a 1/4 cup of melted chocolate to your peanut butter, mix, then add to your broken up rice cake pieces. You should then be able to put your peanut rice cake cluster bars into the fridge for storage, rather than the freezer. This is because coconut oil is frozen (solid) at room temperature, whereas peanut butter is not.

Ingredients: (makes 8 bars)

  • 4 rice cakes
  • 1 cup smooth peanut butter

Method:

Step 1: microwave your peanut butter for a few seconds so that the consistency becomes runnier.

Step 2: next, crumble your rice cakes into a medium size bowl.

Step 3: now, pour your peanut butter over the crumbled rice cakes and mix until all the rice cake pieces are fully coated.

Step 4: line a baking sheet with grease proof paper and pour your mix onto the tray.

Step 4: finally, put in the freezer for 2 hours, then remove and break into pieces. Alternatively, chop into bars.

Eat like this, or dip into melted dairy free chocolate to add some sweetness! Store in the freezer to ensure the peanut butter doesn’t melt!
