Delicious Seeded Flapjacks in just 30 minutes

Want a sweet treat this which is easy to take on the go? Try out these delicious, simple seeded flapjacks! Super soft, sweet and delicious! Packed with super healthy ingredients like nuts and seeds, these flapjacks are sure to keep you full and satisfied long after consumption. These seeded flapjacks are super easy and quick to make, they’re one of my go-to weekly recipes- and they’re always a great hit with the family!

The hardest part of this recipe is melting these three ingredients together! The coconut oil and sugar need to be in liquid form (sugar becoming dissolved), in order to pour and incorporate with the dry ingredients properly. You want to heat the ingredients just enough to have them all incorporated and in a smooth consistency. If you don’t want to use as much sugar, feel free to replace it with more maple syrup. You’ll want to do this with equal ratios (e.g. if you take out 1/4 cup of sugar, replace with 1/4 cup maple syrup.

I love these flapjacks because they take minimal time to make, and have very simple ingredients. It is easy to add in, substitute and take out ingredients as you need. I usually make different flapjack variations whenever I make them, because I always have different ingredients in my home. These flapjacks make your kitchen smell so deliciously sweet. I usually find that the entire batch only lasts about 48 hours! They are a great treat to take with you to parties, gatherings, tea parties or just to share with friends and family!

What else you could add to your seeded flapjacks:

  • Chia seeds
  • Flax seeds
  • Peanuts
  • Chocolate chips
  • Chopped strawberries
  • Dried kiwi slices
  • Dairy free caramel drizzle
  • Peanut butter
  • Orange zest
  • Grated ginger
  • Vanilla sugar
  • Melted chocolate drizzle

Ingredients:

  • 2 1/3 cups rolled or porridge oats
  • 1/2 cup coconut oil
  • 1/2 cup light brown sugar
  • 2 tbsp maple syrup
  • 1/4 cup walnuts
  • 1/4 cup chopped brazil nuts
  • 2 tbsp sunflower seeds
  • rock salt or sea salt to top
  • optional chocolate drizzle

Method:

Step 1: preheat your oven to 180°, and line a medium sized baking tin with parchment paper.

Step 2: in a pan, add your coconut oil, sugar and maple syrup. Take off the heat when the coconut oil has melted and the sugar has dissolved.

Step 3: add your oats, nuts, seeds and hot mix into a bowl. Combine.

Step 4: pour the mix into your baking tin and bake in the oven for 20 mins. Allow to cool for 30 mins before cutting into bars.

These seeded bars will keep in the fridge for up to 5 days. Store in an airtight container.
