Speediest Peanut Butter Energy Balls

Need a super speedy sweet treat for on the go, or to boost your energy levels? These peanut butter energy balls are so quick and easy to make, with only a few simple and cheap ingredients! They’re a great snack to bring with you on a hike, long walk or cycle since they are bite size and easy to digest! I love to just have these around the house to snack on throughout the day since they help me to stay away from naughtier treats! I look forward to you giving them a go!

These have a great balance of sweet and saltiness, from the peanut butter and the maple syrup. If you are not on the low FODMAP diet, feel free to swap out the maple syrup for honey. The chocolate chips help to add a touch more sweetness, and a great crunchy element alongside all the chewy ingredients. The healthy fats from the peanut butter and chia seeds are really important to help you feel full and satisfied after eating these! Healthy fats from these sources are also great for your hair, skin and nails! These sorts of treats are the perfect substitution for naughty sweets that are usually the easier option to grab when you get hit with one of those surprise intense sweet cravings!

One of my favourite things about these peanut butter energy balls (alongside many many other reasons) is how customisable they are. One day I can make them with a bit of cocoa powder, and the next I can add in some protein powder. I will be posting individual recipes for these both, since the ratios are sometimes quite difficult to get right, since they are both quite thirsty ingredients (they absorb a lot of moisture out of the energy balls). You can also choose to add dried fruits, different nut or seed butters and various chopped nuts and seeds. Let me know what your favourite combinations are!

Ingredients: (makes 10-15)

  • 1 cup rolled oats (rolled or porridge oats)
  • 2/3 cup smooth peanut butter
  • 1 1/2 tbsp maple syrup
  • 2 tbsp chia seeds
  • 2 tbsp chocolate chips/chunks (optional but highly recommended :))

Method:

Step 1: mix all of your ingredients in a bowl until fully combined

Step 2: set the mix in the fridge for 30 mins. Cover in cling film.

Step 3: remove from fridge and roll into small balls (I usually aim for slightly smaller than ping pong balls). Enjoy!

Your peanut butter energy balls will last around 5 days in the fridge in an airtight container.
