Fancy a super quick, sweet treat, but don’t have time for a lengthy recipe? Well these mini birthday cake bites could be right up your street! Using only a few common ingredients, you could have these mini birthday cake bites within only 10 mins! These are a great little snack to make for friends, family, for gatherings and for picnics. They store well and transport well, meaning you can take them on the go for a quick sugar boost whenever you need it!
I love how minimal effort this recipe is. It’s totally a sweet treat you could make with the kids, since it’s pretty much mess free and difficult to get wrong! These went down really well with my family (who are not low FODMAP may I add), and I’ve been asked to make them again! They are the perfect bite-sized naughty treat. If you wanted to make these healthier, you can sub out the tbsp of sugar and replace with 2 tbsp of maple syrup. In this case, I would also recommend subtracting 1.5 tbsp of the dairy free milk, to ensure that the texture stays pretty much the same.

I used coconut oil in this version since I had no dairy free butter in my house at the time. I think that this added a really nice extra sweetness to the mini birthday cake bites, which my family and I were a big fan of! If you want the true authentic taste of birthday cake, I would recommend using a dairy free butter like I have in the original recipe. An alternative is to use peanut butter. Whilst this is an excellent source of healthy fats, this will most likely be the star of the show – and will be the main flavour you can taste in the bites! Regardless of which fat you choose to use in these mini birthday cake bites, I recommend storing these in the fridge immediately after rolling them up into balls. The cooler temperatures will help the fats become more solid, and therefore help your mini birthday cake bites stay firmer and have a bit more bite. Storing them in the fridge will also help them not melt onto your fingers as you’re holding them! They’re a great little treat to have around the house, and I’ve found that they never last very long in my home!
Ingredients: (makes 6)
- 7 tbsp gluten free flour
- 2 tbsp melted butter (you can use nut butter or melted coconut oil in substitution)
- 1 tbsp brown sugar
- 1 tbsp white sugar
- 3 tbsp dairy free milk
- 1 tsp vanilla sugar
- 2 tbsp sprinkles
Method:
Step 1: in a medium bowl, mix all your dry ingredients together (except for the sprinkles).
Step 2: add in your wet ingredients. Mix until fully combined.
Step 3: add in your sprinkles and mix until evenly distributed.
Step 4: roll into small balls (slightly smaller than gold balls).
Store these in the fridge in an airtight container for them to keep their firmer texture, and keep them tasting fresh.
