Have a little more time in your morning and want to treat yourself? Well these chocolate chip baked oats may be perfect for you! Being very customisable and incredibly easy, this is one of my new favourite breakfasts! This recipe literally feels like you’re eating dessert for breakfast, what’s not to love?! You would never guess that these chocolate chip baked oats are gluten free, dairy free and low FODMAP. The recipe is super customisable to your own taste and desires, so have fun with it!
One of the things I love so much about this recipe is the fact that there is such little mess and equipment to clean up. It only requires only a bowl and a hand blender (although you can use a Nutri-bullet or blender if you prefer). All you have to do is throw all the ingredients into a bowl and then blend them all up until you get a smooth batter. It’s one of the simplest breakfasts to make, and super healthy! I also love adding protein powder to these chocolate chip baked oats because it bumps up the sweetness. Additionally, the protein helps to keep me more full and satiated for hours after I eat it!

The batter is super thick and stodgy, but do not worry! The batter will become super fluffy in the oven, making the baked oats super delicious to eat. I also love that the chocolate becomes all melted, making the baked oats so incredibly smooth and gooey! These chocolate chip baked oats feels like you’re eating warm cookie dough- just like the stuff you buy at a dessert shop! I will definitely be making this breakfast far more regularly when I have more time in the mornings. Additions you could add to your chocolate chip baked oats:
- Peanut butter in the batter
- Icing sugar
- Melted chocolate core
- Fresh fruit- kiwi, strawberries, oranges, berries, pineapple
- Maple syrup drizzle
- Dairy free yoghurt
- Chopped nuts- pecans, walnuts, hazelnuts, peanuts
- Drizzle of peanut butter to finish
- 1 tbsp of chia or flax egg in replacement of the egg white
Ingredients: (single serve)
- 1 cup oats (rolled or porridge)
- 1/2 cup almond milk
- 1 egg white
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla sugar/ vanilla essence
- 2 tbsp maple syrup
- 2 tbsp protein powder
- 2 tbsp chocolate chips
Method:
Step 1: preheat your oven to 180°.
Step 2: firstly, blend all of your ingredients (apart from the chocolate chips) for 1 min.
Step 3: pour your batter into your ramekin (can split between 2 for smaller portions, or 1 for a larger portion).
Step 4: bake in the oven for 30 mins.
Finally, add your desired toppings and consume! Be careful- the baked oats will be super hot fresh out of the oven!
Best served warm fresh out the oven, but can also be stored in an airtight container for up to 3 days.
