A lovely, refreshing way to start your day. This blueberry yoghurt parfait is so unbelievably easy to assemble, yet it tastes so delicious!! It has a great creamy texture to accompany the crunch from the granola, and to mellow out the intense sweetness of the blueberries. It is certainly one of my new breakfast obsessions, especially leading up to Summer. Give this parfait a try and let me know what you think!
I love yoghurt parfaits as they remind me of summer. This blueberry bowl is so well balanced with sweet and more mellow flavours mixing together. Another thing that I love about parfaits is that you get all the different elements in each spoonful. The blueberries add such a lovely refreshing taste to the yoghurt parfait, and the chocolate adds a touch of sweetness, helping to hit that sweet craving which I’m sure we all know too well! This dairy free greek style yoghurt I’m using is super thick and creamy- which makes it perfect to use in a parfait, since it won’t gloop down and sift through all the other layers. Obviously this is not something to worry about if you are not too concerned about the presentation!

I love how customisable yoghurt parfait bowls are. You can basically throw in whatever you like depending on what ingredients you have in your home. I usually make this blueberry yoghurt parfait, but I also love to switch it up with a pina colada inspired bowl- by adding pineapple and coconut shavings. It is important though to not surpass the recommended allowance for coconut, since it can become an issue for IBS if consumed in high quantities! I love adding healthy fats such as coconuts, nuts or seeds to my yoghurt bowls, since they help to keep me full for longer, meaning that I won’t need another snack again soon after consuming one of these bowls!
Other topping options for your blueberry yoghurt parfait:
- Melted chocolate drizzle
- Peanut butter
- Seeds- chia, flax, sunflower, pumpkin
- Nuts- walnuts, peanuts, pecans, brazil, hazelnuts
- Maple syrup
- Protein powder (added to the yoghurt before assembling)
- Strawberries
- Kiwis
- Orange slices
- Crumbled up low FODMAP cookies
- Sprinkles
You may have seen on my previous yoghurt bowls that I tend to add protein powder to the yoghurt before assembling my bowl. I do this to help keep me satiated for longer, since protein is slower to digest. But I find that when I make a parfait bowl, I want to have a plain base layer of substance, so that my other ingredients in the layers taste more strong. If I were to add my protein powder, it is likely that it is the main thing that I would taste, and when I crave a parfait bowl, I’m looking for something that is refreshing and has a crunch! This is why I like to have a neutral tasting yoghurt in my parfait bowl!
Ingredients: (single serving)
- 1 cup dairy free greek stye yoghurt
- 1/4 cup blueberries
- 3 tbsp low FODMAP granola
- Sunflower seeds
- Dairy free chocolate shavings
Method:
Step 1: fill your glass with about 1 inch of yoghurt.
Step 2: add a layer of blueberries, just enough to cover the yoghurt.
Step 3: add another layer of yoghurt- about 1cm thick.
Step 4: sprinkle your granola over the yoghurt until it’s completely covered.
Step 5: repeat this process until you reach the top of your glass, then top with some chocolate shavings, or whichever toppings you fancy!
This blueberry yoghurt parfait is best served immediately, but will keep in the fridge for up to 2 days in an airtight container.
